Bless Janelle Bloom I say. This recipe came from an old Christmas issue of Family Circle where she shared this recipe and I just love this recipe. LOVE it. Hubby took it along to work for his colleagues this week - I'm such a nice wife... of course I had to sample some pieces - you know just to make sure they weren't yukky or anything... you know how it is....
It's really easy to make and in the microwave there is next to no mess or guess work!! You could change the Baileys for raspberry liqueur or kirsch or even creme de menthe - whatever you fancy!
1 tin condensed milk
1 cup packed brown sugar
2 tb glucose syrup
200gr good quality dark chocolate (I used Nestle Plaidstowe)
25ml baileys irish cream
100g unsalted pistachios
Grease a 20x20cm tray and line with baking paper
In a microwave proof bowl (I would recommend pyrex as the mixture gets VERY hot) mix together the condensed milk, butter, brown sugar and glucose syrup. Pop in the microwave on 70% power (medium high) for 7 minutes - taking out and stirring after every 2nd minute.
The mixture will slowly change colour and thicken. After the initial 7 minutes set the microwave for another 3 minutes and stir after every minute.
It will be bubbling on top, so when you remove it for the last time, allow to cool for 1 minute, and then whisk through your chocolate.
Add your Baileys (If you don't have a full bottle (or couldn't remember if you did whilst you were out doing your shopping) grab a miniature!)
Add your pistachios
Pour into your tray and allow to cool on your bench for about 2 hours.
Remove from the tray by lifting out the baking paper, and cut with a sharp knife
Store in an airtight container in the fridge for up to a week. I like to half-wrap them in some cut up baking paper... yummy.
